Why brew your own kombucha? Seven good reasons
In short
Brewing your own kombucha gives you a sparkling tea-based drink made exactly to your taste, in flavours you pick, for very little money and only a few minutes of effort. A live Natural Probio SCOBY arrives in its own liquid with a guide and exclusive recipes, so your first homemade kombucha is ready in a good week. It also makes a lovely weekly ritual at home and an unusual gift.
Most people meet kombucha in a bottle: at a café, in a lunchtime meal deal, in a chiller cabinet. Then, one day, they wonder whether they could make it themselves. The answer is yes, and quite easily. Here are the seven reasons our customers give most often when we ask why they took the plunge.
Does it really taste better when you make it yourself?
It tastes like yours, which is the point. When you brew at home, you decide how long the jar sits, so you decide how sweet or how sharp your kombucha ends up. Some like it soft and rounded, closer to a sparkling iced tea. Others let it go further for a dry, almost cider-like finish. You can stop wherever your palate says stop, and you can change your mind next week.
You also choose the tea. A brisk breakfast blend gives a deep amber kombucha with a malty backbone; green tea gives something paler, lighter and grassier. The guide in your parcel explains which teas work best and how each one changes the result.
Can you flavour it however you like?
Yes, and this is where most people get hooked. Once the kombucha is ready, you bottle it with fruit, herbs or spices and let it pick up their character in the fridge. Think elderflower and lemon in late spring, strawberry and mint for a garden party, forced rhubarb and ginger when the pink stalks appear, or clementine and cinnamon for the Christmas table. Our flavour ideas are a good place to start, and the exclusive recipes that come with your SCOBY go further.
How much effort does it take?
Far less than people expect. You spend a few minutes making a jar of sweet tea, add the SCOBY with its liquid, cover it with a cloth and walk away. Then you wait about a week, taste, and bottle. There is no special equipment and nothing to watch over. A glass jar, a sieve, a clean cloth and a few swing-top bottles are all you need, and most kitchens already have them. See brewing in three steps for the full picture.
Does it cost less than buying bottles?
Once your SCOBY is up and running, a jar of kombucha costs next to nothing: a few tea bags and a little sugar, plus whatever fruit you fancy for flavouring. That is a very different sum from a fridge full of bottles bought one at a time. We do not quote figures here because the cost of the SCOBY itself is shown, always up to date, on the official shop, and because what you spend on flavours is your call. Our homemade or shop-bought comparison goes into the detail.
What can it replace in your fridge?
Many customers start brewing because they want a grown-up soft drink that is not another fizzy can. Kombucha has bubbles, acidity and real flavour, and you know exactly what went into it: tea, sugar, the culture and the fruit you chose. It sits nicely next to sparkling water at lunch, works as an aperitif when you are not in the mood for wine, and stands up well to food. Our page on kombucha with food and as an aperitif has plenty of ideas.
Why do households enjoy it so much?
Because it becomes a small shared habit. Someone chooses this week's flavour, someone else fills the bottles, and everyone has an opinion at the tasting. Younger members of the household are usually fascinated by the SCOBY and the bubbles rising in the jar. For many of our customers, Sunday afternoon is now kombucha afternoon.
Why is it such a good gift?
A live SCOBY is the opposite of a gift that gathers dust. It gets used every week and comes with everything needed to succeed. It suits tea lovers, keen cooks, people who have just moved house and anyone who enjoys a project. Our gift ideas page suggests the right product for each kind of person.

Common questions
How long before I can drink my first homemade kombucha?
About a good week after you start your first jar. The guide tells you how to taste and when to bottle.
Do I need to buy any kit?
No. A large glass jar, a sieve, a clean cloth and some swing-top bottles are enough. Everything else is tea, sugar and water.
Can I make it caffeine-light?
Kombucha starts from tea, so it always contains some caffeine. The guide explains which teas you can use if you prefer a lighter cup.
What if it does not work?
Write to us with a photo. Your SCOBY's activity carries a lifetime guarantee: if it stays inactive in normal conditions of use, we replace it at no cost.
