Homemade kombucha, brewed in three steps
In short
You make a jar of sweet tea and let it cool, add your live SCOBY with its liquid, cover the jar with a cloth and leave it for about a week. Then you taste, bottle the kombucha with the flavour you like and chill it; the SCOBY is ready for the next jar. The guide that comes with your Natural Probio SCOBY explains each step in detail, with the signs that tell you all is well.

- Step-by-step guide
What are the three steps?
- Make the sweet tea
Brew your tea, stir in the sugar and let it cool completely. Pour it into a large glass jar.
- Add the SCOBY and wait
Slide in your SCOBY with its liquid, cover the jar with a cloth and leave it somewhere calm in the kitchen for about a week.
- Taste, bottle and enjoy
When the balance suits you, bottle the kombucha with your chosen flavour, then chill. Your SCOBY is ready to start again.
That really is the whole method. The first time, you follow the guide closely; by the third jar, you hardly need it. If you have never brewed anything, our beginner's guide answers the questions most people have before they start, from the day the parcel arrives to the first bottle.

No machine, no hard-to-find ingredients, nothing extra to buy.
What does the guide cover?
With your SCOBY you receive a quick-start leaflet and a complete guide as an e-book. Together, they walk you through:
- how to start your very first jar the day your parcel arrives;
- which teas work well and what each one changes in the taste;
- the simple signs that show everything is going to plan;
- how to tell when your kombucha suits your taste, softer or sharper;
- how to give it a lively sparkle in the bottle;
- how to look after your SCOBY when you are away for a while.
A QR code in the booklet also opens our exclusive recipes, so you can vary flavours all year round: summer flavours, winter and Christmas ideas, or pairings with food. Everything you receive.
The guide is written for someone who has never made kombucha: plain sentences, visual cues and answers to the questions every beginner asks. You can come back to it whenever you like, and our team is a short email away if a point seems unclear.
How much of your time does it take?
Very little. Making the sweet tea takes about as long as boiling the kettle a couple of times and waiting for it to cool. After that, the jar needs nothing from you for about a week. Bottling takes a few minutes more. Many customers like to start a new jar on Sunday afternoon and bottle the previous one at the same time, so kombucha becomes a weekly routine that takes less time than the washing-up.
How will you know it is working?
The guide shows you what to look out for. Typically, the tea becomes a little cloudier, the smell turns gently tangy, and small bubbles start to gather in the jar. Your SCOBY may float, sink or sit sideways: all of that is fine. Brown strands and darker spots are normal too. If something puzzles you, take a photo and send it to us; we will tell you whether all is well.
What if you have a question?
Write to hello@natural-probio.com, with a photo if you can. Write in English and a real person replies, usually the same day. As Alex C. put it about our milk kefir guide on Trustpilot: "The explanations are clear and they even offer personal support if you have questions" (translated).
Questions about the method
Can I start on the day my SCOBY arrives?
Yes, that is ideal. If you cannot, keep the pouch in the fridge for a few days and start when you are ready.
Do I need any special equipment?
No. A glass jar, a sieve, a cloth and some bottles that close well are all you need.
What do I do with the SCOBY after the first jar?
It goes straight into the next jar of sweet tea, as the guide explains.
