Kombucha SCOBY › Kombucha vs iced tea

Kombucha or homemade iced tea: same teapot, very different glass

In short

Homemade iced tea is tea that has been sweetened or flavoured and chilled: still, soft and ready within the hour. Kombucha also starts from sweet tea, but a live SCOBY transforms it over a good week into a tangy, lightly sparkling drink with much more depth. Iced tea is the quick summer standby; kombucha is the one you brew for its character, its bubbles and its flavour possibilities. A Natural Probio SCOBY comes with a guide and recipes.

On a warm afternoon, both look the same in the glass: amber, cold, with a slice of lemon. People who have tasted both know the difference instantly, though. If you make iced tea every summer and wonder whether kombucha is worth trying, this page sets out what changes.

Where do they start?

From the same place: a pot of tea. For iced tea, you brew, sweeten if you like, add lemon, peach or mint, and chill. That is the end of the story. For kombucha, the sweet tea is only the beginning. You add a live SCOBY with its liquid, cover the jar with a cloth and let it work for about a week. During that time, the culture transforms the tea: the sweetness softens, a gentle tartness appears and, once you bottle it, so do the bubbles.

How do they taste?

Iced tea is smooth, mellow and usually quite sweet. It is pleasant, easy and very much a summer thing.

Kombucha is livelier. It keeps the tea's warmth but adds a tang somewhere between apple and citrus, a rounder body and a sparkle that makes it feel like a proper drink rather than a cold cuppa. It also carries flavours differently: elderflower, raspberry or ginger added to the bottle settle into the drink and come out in the bubbles. Take a look at our summer kombucha flavours for inspiration.

When does each one make sense?

Iced tea is unbeatable when you want something cold right now and the kettle is already on. Kombucha is for when you want a drink with personality: at the table, as an aperitif, in a jug with cucumber and mint at a garden gathering, or simply as your everyday sparkling drink. It also works all year: warming spice and clementine at Christmas, rhubarb in spring.

The two are not rivals. Plenty of our customers still make iced tea on the hottest days and keep a jar of kombucha going for everything else.

Is kombucha much more work?

Barely. The first step, making sweet tea, is the same as for iced tea. The extra is adding the SCOBY and then waiting, which takes no effort at all. At the end, you strain and bottle, ideally with a flavour you fancy. Our three-step overview shows how simple it is, and the guide in your parcel covers every detail.

Common questions

Is kombucha just fizzy iced tea?

No. The SCOBY transforms the tea over about a week, which gives kombucha its tang, body and sparkle. It tastes quite different from tea that has simply been chilled.

Can I use the same tea I use for iced tea?

Often, yes. The guide in your parcel explains which teas work best for kombucha and what each one brings.

Does kombucha contain caffeine like iced tea?

Yes, some, because it is made from tea.

Does kombucha contain alcohol?

Only traces, generally under 0.5%, like any homemade fermented drink.
