Kombucha vs water kefir: which homemade fizz suits you?
In short
Kombucha is sweet tea turned into a tangy, sparkling drink by a SCOBY, with a rounded, slightly vinous depth; it is ready in a good week. Water kefir is sugared water with a little fruit, turned into a light, fruity fizz by water kefir grains; it is ready the next day. Tea lovers and patient types lean towards kombucha, fruit lovers and the impatient towards water kefir, and many people simply take the Natural Probio duo.

- The duo
This is probably the question we are asked most before a first order. Both drinks are homemade, both sparkle, both take flavours well. Yet anyone who has tasted them side by side will tell you they are not the same thing at all. The right choice comes down to two questions: what do you enjoy drinking, and what pace suits your week?
How do they taste?
Kombucha carries the character of the tea it was made from. Brewed with black tea, it is amber, rounded and pleasantly tart, with a faint fruitiness of its own and firm bubbles once bottled. Some people compare it to a dry cider, others to a sharp, grown-up ginger ale without the ginger. With green tea it becomes paler and more delicate.
Water kefir is lighter on its feet. Plain, it tastes softly sweet and gently acidic, a little like a homemade lemonade that has been left to sparkle. Its real talent is fruit: a few raspberries, a slice of orange or some grated ginger in the bottle and it takes on their colour and flavour completely. It wins over almost everyone, including people who have never tried a fermented drink.
What rhythm does each one ask for?
Water kefir runs on a daily loop. You start a jar, strain it the next day, bottle it and start again. If you like having a fresh drink in the fridge every day and changing flavours often, that rhythm is a joy.
Kombucha works on a weekly cycle. You make a larger jar of sweet tea, add your SCOBY with its liquid and leave it for about a week before tasting. There is less to do day to day, but you need a little patience at the start. Plenty of our customers love precisely that slower pace: a single weekend task, and a jar that changes gently as the days go by.
How do they compare side by side?
| Point | Kombucha | Water kefir |
|---|---|---|
| The culture | A SCOBY with its starter liquid | Live water kefir grains |
| The base | Sweet tea | Sugared water and a little fruit |
| The taste | Tangy sparkling tea, deeper | Fruity, bright, lemonade-like |
| Ready in | A good week | The next day |
| Your time | A few minutes per jar | About five minutes a day |
| Caffeine | Some, from the tea | None, there is no tea |
| Best for | Tea lovers, food, aperitifs | Everyday drinking, fruit lovers |
The two cultures cannot stand in for each other: a SCOBY will not make water kefir and water kefir grains will not make kombucha. Each comes with its own guide in your parcel.

Why not have both?
It is what a good number of our customers end up doing. Water kefir keeps the fridge stocked day by day, while kombucha brings a different bottle each week. The rhythms dovetail without asking for much extra time. The kombucha and water kefir duo puts both cultures in one order, with two guides and the exclusive recipes. And if you would like milk kefir too, the complete kit includes all three.
Elisa took both in June 2026 and wrote on Trustpilot: "Both cultures worked perfectly on the very first try, and the drinks taste absolutely delicious."
Common questions
Is water kefir easier than kombucha?
It is quicker, which helps you learn fast. Kombucha is not difficult either; it simply needs a week's patience. Both come with a step-by-step guide.
Which is fizzier?
Both become nicely sparkling once bottled and closed. Water kefir has fine, light bubbles; kombucha often has firmer ones. The guides explain how to get the sparkle you like.
Which contains more alcohol?
Both contain only traces, generally under 0.5%, like any homemade fermented drink.
Does water kefir contain caffeine?
No, because it is made without tea. Kombucha does contain some caffeine, since it starts from tea.
