Your first kombucha: a calm guide for beginners
In short
Never made kombucha? You are in good company: most of our customers start from nothing. Your Natural Probio SCOBY arrives alive in its own liquid, with a quick-start leaflet and a step-by-step guide. You start your first jar on the day it arrives, and about a week later you taste your first homemade kombucha. The first brews can be a little slow while the SCOBY settles in, and that is normal. If a question comes up, our team answers.
Starting anything new brings a few nerves. Is it complicated? How will I know if it is working? What if I get it wrong? This page takes those worries one at a time, from the moment you order to your first bottle.
What should you think about before ordering?
Choose your product. If you love tea and like the idea of a drink that develops over a week, the kombucha SCOBY is the natural choice. If you would also like something ready the next day, the duo with water kefir covers both. Not sure? Which to buy helps you decide.
Check your cupboards. A large glass jar, a sieve, a clean cloth or tea towel and a few bottles that close well. That is the whole kit; there is nothing more to buy.
Think about delivery day. Your SCOBY is alive, so the best plan is to open the parcel the day it arrives. If you will be away, the pouch waits happily in the fridge for a few days.
What happens on the day it arrives?
- Open the parcel
Check the contents. A slightly puffed pouch is a good sign: your SCOBY is alive.
- Read the leaflet
Two minutes to understand the first steps, with clear illustrations.
- Start your first jar
Sweet tea, cooled, in a glass jar; then your SCOBY with its liquid and a cloth on top.
What will your first week look like?
The first days: nothing seems to happen, and that is exactly right. Your SCOBY is settling into its new home after the journey. Leave the jar alone, out of direct sunlight.
Around the middle of the week: the smell starts to turn gently tangy, and you may notice small bubbles. The SCOBY might float, sink or tilt; any of those is fine.
After a good week: the guide shows you how to taste. If you like the balance, bottle it with a flavour of your choice and chill. If you would like it sharper, give it a little longer. Then your SCOBY goes straight into a new jar.
Your very first jar can be slower than the ones that follow. That is normal after a trip through the post: the SCOBY finds its rhythm within two or three brews.
Which signs are reassuring?
A few bubbles
Small bubbles in the jar mean the culture is at work.
A changing taste
Less sweet, more tangy: precisely what you are hoping for.
The guide to hand
Each beginner's situation is described, with the right response.
A team to ask
A photo of your jar and a few words: we will tell you how it is going.
What are the most common worries?
"My SCOBY has brown strands and dark spots." Completely normal. They are part of a live culture and often hang from the underside. If you are not sure, send us a photo: we answer quickly.
"What if I get it wrong?" Kombucha is forgiving when you follow the guide. A jar that is a little too sweet or too sharp is not a failure; you simply adjust timing on the next one.
"What if my SCOBY does not get going?" Its activity carries a lifetime guarantee: if it stays inactive in normal conditions of use, we replace it at no cost. Our guarantee, explained.
"I do not have much time." A few minutes to make sweet tea, a few more to bottle a week later. The SCOBY does the rest.
"I am going on holiday." The guide explains how to leave your SCOBY while you are away.
How did other beginners get on?
"To be honest, I was a bit nervous at first, but the instructions are incredibly clear, thorough, and easy to follow (the included booklet is an amazing guide if you're a beginner like me!)."
Elisa, June 2026Trustpilot review"Very good quality water kefir crystals were sent. Activation was child's play. Lots of recipe ideas were sent along. Thanks!"
Stefan T., May 2026Trustpilot review, translated from GermanBeginners' questions
Do I need any experience of fermenting?
None. Most of our customers have never brewed anything before, and the leaflet and guide are written with them in mind.
Is kombucha a good first project?
Yes. It asks for a little patience rather than skill. If you would like a result the next day as well, add water kefir with the duo.
Can I ask questions after buying?
Yes, for as long as you need, by email at hello@natural-probio.com. We reply within 24 working hours, usually the same day.
